1 pound of parsnips, peeled
& grated
Combine all of the above ingredients (except the orange liquer) into a saucepan. Slowly heat the contents to a good boil, then reduce the heat. Simmer the contents uncovered and stir occasionally for 25 minutes. Stir in the orange liqueur and cook for five more minutes. Pour the marmalade into jars and then seal. Process the finished in a hot water bath for 12 minutes. Makes three cups of Parsnip
